Serves 2

Oven Temperature 200°C / or lidded gas BBQ at medium high.


2 small or 1 large brown trout

2 medium tomatoes

1 tablespoon of garlic sauce

1 teaspoon of salt


  1. Rinse trout, pat dry with paper towel.
  2. Dice the tomatoes and mix with garlic sauce and salt.
  3. Place trout on a sheet of foil and fill the cavity with chopped tomato, place remainder over the fish. Bring the edges of the foil together to make a sealed parcel.
  4. Place in oven or on the BBQ, and cook for 20 minutes.

Serve with potatoes, steamed, mashed or chipped. Salad or snow peas.
